Kanchanjangha Tea Estate and Research Center Pvt. Ltd. (KTERC) is the first certified organic tea garden in Nepal. This white tea is made differently from most others, and does not follow traditional production methods. The tender one leaf and a bud are typically hand-plucked during the first and second flushes (spring and summer). Unlike other white teas, which go through minimal processing, this tea undergoes a small process that gives it a unique and special character, leading some to call it a silvery oolong. The leaves are withered for a few hours and then rolled under low-medium pressure for 8-10 minutes to release essential oils. The fresh aroma is captured and preserved through drying, but the timing of this process requires skill and artistry to capture the desired flavors and aromas, as the tea does not go through much processing time. This deviation from the standard white tea processing has led some to classify this tea as a new variety or category of oolong.
